Management monitors expenses very closely. So, when they get on you for wasting napkins – or preventing people from pilfering shot glasses, you’ll know why.
A bar and restaurant will have many different types of vendors. Weekly deliveries, daily deliveries – you name it. It all depends on what kind of food and beverages they offer.
Make no mistake – the bar owner (or bar and restaurant chain), is in the business to make money. Period.
Unfortunately, I have had to fire many bartenders throughout the years. Usually for theft, but there are many additional factors that will determine how long a bartender keeps his job.
Every bar has a “Point of Sale” system. Or, commonly known as the “POS” System. What does it do? It’s a cash register. It processes credit cards. It has specific keys for every food and beverage items. And more.
Every bar should have waste/spill sheet. These are not free drinks! Did someone knock over another customer’s drink? Replace it (free), and write it down on the ‘spill’ sheet.
Most people new to the Food & Beverage Industry, and especially bartending, have no idea what role the bar owners and bar managers play in the overall picture. I’m going to give you a heads-up here.
Most chain restaurants and bars will contract with a “spotter” company. Count on it. It may be internal, but you can bet they send out people on a regular basis to observe employees – and check up on their managers.
What is a tip pool? Management has a tipping system where all tipped employees pool ALL tips, and then the “system” redistributes these tips between all employees.
